This is a formal declaration to the society they intend to marry. Pope Nicolas being known for his great commitment to marriage also said that the ring cannot be just any other ring. It is supposed to be the most valued metal of all.
The diamond was then discovered by the Venetians to the hardest and strongest rock produced by nature. They were also the ones that discovered and mastered the art of polishing it. However, another reference also said that it was the Anglo-Saxon who started the tradition of engagement ring.
Nowadays, diamonds are the most sought after rock for an engagement ring. However, there is an emerging trend of going for the old style Victorian engagement ring because of its legacy, history and rarity. They said the Jude Law proposed to Sienna Miller with Victorian engagement rings. You can be sure than when someone like Law and Miller start a trend, the whole world will follow.
